Macadamia crusted Mahi Mahi

This recipe is one Alton Brown makes, and I make it for my family. Even the kids eat it!

4 mahi mahi filets (or other white fish)
3 Tbs. light coconut milk
1/2 c. panko bread crumbs
1/2 c. macadamia nuts, pulsed in a food processor
1 Tbs. olive oil
Salt and pepper to taste

Combine the panko bread crumbs, macadamia pieces and olive oil in a bowl and toss to mix thoroughly.

Season the fish with salt and pepper and bake in a 350 degree oven for 5 minutes. Remove from the oven, brush each fish with coconut milk and cover with the macadamia/panko mixture.

Put the fish back in the oven for 5-15 minutes or until the top is golden brown and the fish is cooked through.

Serve with a big green salad or steamed vegetables for a complete meal.
